Don Fulano Reposado

Pale golden yellow. Sweet prune, coconut, vanilla bean, cinnamon and nutmeg aromas with lovely grassy notes. A firm, round entry leads to dry-yet-fruity medium-bodied palate with tasty coconut, sweet prune and brown spice flavors. Finishes with a long, sweet and spicy fade of cream and ashy minerals. Remarkable purity and character.

In The Glass

40% ABV – 6/750ml

DON CYNAR / El Gallo Altanero / Guadalajara, Mexico / Selected by 50 Best Bars

1.5 oz Don Fulano Fuerte
.5 oz Cynar
.5 oz Freshly squeezed lime Juice
.5 oz Tepache or Fermented pineapple syrup *
2 dsh Angostura bitters

Place all the ingredients in a shaker, add ice and shake vigorously, double strain in a rocks glass with ice, dehydrated pineapple, and pineapple stalk as garnish.

* Fermented pineapple syrup:
1 full Pineapple rinds
450 gr Sugar
200 ml Still Water
1 bsp Citric Acid

Place the pineapple rinds in a plastic container, cover with sugar, let rest at room temperature for 12 hours, remove pineapple rinds and strain the liquid, dissolve the rest of the sugar with water, add citric acid, let stand 30 min in fridge before use, keep refrigerated. Shelf life: aprox. 3 weeks.
