RESERVE
Cabernet Sauvignon
Sonoma County, California, 2017
ABOUT THE WINE
The 2017 vintage of Iron Side Reserve Cabernet Sauvignon primarily comes from grapes grown in Alexander Valley (85%), on sloping vineyards of gravelly soils just north of the town of Healdsburg. There, the cooling influence from the Pacific Ocean moderates the warm Mediterranean climate, thus preserving freshness and texture in the wine. This interplay of warm sun and cool air makes Alexander Valley the ideal winegrowing area in Sonoma County for premium Cabernet Sauvignon, resulting in wines that are fully ripe yet well balanced with acidity.
PRODUCTION
To make this wine bunches are picked, sorted, destemmed and crushed to release the juice from the berries. Fermentation occurs slowly at first and then more rapidly as temperature rises. The juice is pumped over the skins to
extract Cabernet Sauvignon’s classic dark ruby color, plus some soft tannins which adds texture and definition. The wine was cellared for more than 12 months prior to release, allowing the texture and flavors to harmonize

TASTING NOTES
Deeply colored, soft textured and full-bodied with black and red currant flavors in addition to plums, black cherries, and lightly toasted oak. The wine’s flavors are fresh and vivid, highlighting the wine’s fully ripe fruit and balanced acidity. The wine is soft but not lacking structure. Ample tannins provide a backbone to the rich, generous fruit. Pair with barbequed chicken or beef, aged cheeses or a wild mushroom risotto.
